Last Minute 4th of July Treats!


With the 4th of July falling on a Tuesday this year I feel so unprepared for our annual family cookout! I woke up yesterday in a bit of a panic because I realized that I had some hamburgers and hotdogs in the refrigerator but not much else was planned. Usually, I have dinner planned and the ingredients for a red or blue frozen cocktail and a delish dessert made with patriotic colors. I started to raid the pantry to see what I could come up with and was so excited to find some red sprinkles, blue and white sprinkles and a small container of white icing. (I may have had to pull the white snowflake shaped sprinkles out of the blue and white ones but it worked!) I whipped up some chocolate chip cookies with my Penny and voila, cookie sandwiches for the win! The hardest part was not eating all of them yesterday! Start to finish, this recipe was less than 45 minutes with the bulk of the time spent baking the chocolate chip cookies! You can use store bought cookies, too! We just pressed two cookies together with icing in the middle and rolled the edges in the sprinkles! So easy! Honestly, Penny did most of the work! And most of the tasting! ;)

Onto cocktails! Hello Rose! These patriotic spritzers are SO easy. I used an ice cube tray and filled it half way with sprite. Next, I added blueberries and strawberries before freezing. Adding these ice cubes to a glass of chardonnay or rose created the perfect festive libation! Quick and easy! The sprite adds just a tiny bit of bubbles and an extra dash of sweetness to the wine. Super yummy and refreshing!
